Easy pregnancy recipes during lockdown

Hello lovely readers, I am back again but this time with something a little different than my usual waffling post. I have been asked by a few people who have seen my cooking on social media, for me to do a blog post based around some recipes that I can share with you all.

Let me just start by saying that I am by no means a chef at all, and actually most of what I cook comes from me making it up as I go along, but I love cooking and I find half the fun is experimenting with food.

I wanted to share some easy recipes and also items that you can have in your cupboard, these can also be useful for when your baby is born and you do not have a lot of spare time, or when you are tired in pregnancy.

Simple Pasta bake:

First let me start with something I made yesterday, my sister the other week kindly had a vegetable box delivered to me from a farm which was super sweet, so I wanted to use some veggies.

Ingredients you will need.

  • Flour
  • Cauliflower
  • pepper
  • garlic
  • cheese
  • milk
  • pasta

Can I just say that you can improvise, some people may not use animal products, so perhaps a vegan cheese, or you can skip the cheese sauce as well, and add different vegetables to it.

Firstly put some sunflower oil in a baking dish and after washing, chop up cauliflower florets and also some leaves as they add flavour to your dish, next chop up some pepper, thinly sliced and add to the dish, add some salt and pepper and pop this in the oven at 200 for 20 minutes or until slightly soft and crunchy.

Next whilst waiting for the veggies to cook, boil the pasta, you can make this healthier by adding wholewheat pasta, at this point you can also make the cheese sauce.

I will be honest, I did not measure out any of the ingredients, I would say start by chopping up garlic and adding it to a pan to fry it, then once cooked add in the milk, a small cup size, then add some flour, you don’t want to over do this, otherwise you will end up with a gloopy pasta rather than a cheesy one, you need to stir this all together until it creates a good consistency, then next add the cheese until it has melted, don’t have the sauce on a high heat, and keep your eye on it, so it doesn’t bubble over.

Finally take the veggies out the oven, add your pasta, mix together then add your sauce, and some extra cheese on top, a stronger cheddar will give it added flavour. next pop it in the oven for a further 20 minutes or until crispy on top, once finished either eat it straight away or wait for it to cool down and you can keep it in the fridge for later or even freeze it.

Passata Sauce:

Ingredients you will need

  • Passata
  • Garlic
  • oil
  • salt
  • pepper

I want to share with you a super, simple sauce that you can add to meatballs, pasta, veggie pasta, and well whatever you like really, but don’t disrespect the sauce, it should really be combined with a spaghetti or pasta dish. Having travelled to Italy since I was little, and having some Italian heritage, I have come to understand that cooking doesn’t always have to be complex, and that the most simple ingredients and dishes, can be the most enjoyable and delicious ones.

So let me save my waffling skills….Passata is just pureed tomato, so firstly add this to your pan on a very low heat, next add some garlic, oil and salt and pepper, this is not a joke, that is literally all you need, keep it on a super low heat, and add quite a lot of the passata, the whole point of the sauce is that its super simple, but by keeping it on a low heat and allowing it to simmer, you let all the flavours be captured. let it simmer for about 30 minutes, you can also add some meatballs, or even some vegetables…cooking is what you make it.

Chicken Quesadilla foldover wrap

The last recipe of the week is this delicious one, now my other half is south american and he loves his rice, so you can add rice and a salad to it as well, for an exra fulfilling meal.

Ingredients you will need

  • Wholewheat/normal wraps
  • chicken fillets thinly sliced
  • pepper/any kind of veggies in your fridge
  • sourcream
  • chilli sauce/spicy sauce
  • Avocado to make a salad
  • salad if desired
  • lettuce
  • red onion
  • Tomato
  • grated cheese

I again want to say that this recipe can be changed and added to.

In a pan add some oil and after chopping chicken, add this to a pan on a fairly low heat so you don’t over do the meat, next add thinly sliced pepper after the chicken is half cooked, you can also add some garlic as well for added flavour or red onion. Next you will need to add some chilli sauce, you can just add some chilli flakes, you can also chop up chilli or add any taco seasoning that you can buy from the shops, next add some cheese and fold over, once it looks cheesy and delicious enough, pop it on your plate and indulge. You can also add some black beans as well which will make this dish extra delicious.

As I said you can add some rice on the side, or for a healthy option chop up some avocado, lettuce, tomato and raw onion and add some dill salad oil or balsamic, which ever you desire to make a delicious and simple salad to add to it.

Cupboard items:

I also wanted to quickly share items that I feel are such essential cupboard items to have when you want some easy ideas for cooking.

  • Chickpeas-I love making an easy veg curry with these
  • Coconut milk (curry)
  • Spices
  • Passatta
  • kidney beans (chilli con carne veggie style)
  • flour
  • Always have a veggie stock or meat one ( to make stew)
  • rice
  • cous cous
  • noodles and pasta (for a simple dish)
  • canned fish (tuna, not as much, but mackerel is great)

I am sure there are lots more cupboard items, but these are the necessary ones, the staple ingredients of a dish.

These are my simple recipes to tell you about, I also want to do some more veggie recipes, I don’t always like to eat too much meat during the week, but I have found during lockdown my love for cooking has certainly increased, so maybe in the future I can share some more recipes, unless you try these and find they are a disaster.
